Hand Pressed Argan Oil Production

A woman presses kernels to produce argan oil by hand at her home in Essaouira. Traditionally, the oil also extracted in this manner for thousands of years, but the process requires water, which can cause the oil to oxidise more rapidly and is also less efficient in producing quantities for a competitive market and a longer shelf life. The mechanised press is becoming a standard; even in the smaller businesses throughout Morocco.
